Chef Rich Francis grew up at the other end of Lake Ontario in Six Nations of the Grand River and is no stranger to Walleye. He’s been fishing and cooking Walleye since he was a boy, but drawing on inspiration from Christine, Billy and Treena, as well as the ingredients available locally, he creates 4 brand new plates over this fire.
