A few kilometers out to sea, just a few hours ago, Captain Peter and his crew caught the lobsters Rich is working with. The crew gets started at 3am and are out at sea hauling traps before the sun even rises. Most days, they’ve hauled 300 traps and are back at the Lennox Island wharf by 11am. Watching them on the boat, Chef Rich notices how well they work together- they all know each other’s next move and the workflow is fast and efficient, just like chefs in a kitchen.
