Chef Rich has cooked with caribou meat a lot, but before this homecoming trip North, was feeling like his approach to the protein had gotten stagnant. Spending time with Jimmy, Diane and their wonderful family, the hunting expedition Jimmy took him on for this particular caribou, and the life-affirming close-call with the Grizzly Bear (if you haven’t watched the Caribou episode- go watch it!!), all found its way into an inspired trio of brand new dishes, united by the common theme of “comfort food”.
