BELUGA

Northwest Territories

They don’t really make pots big enough to cook whale in, so most people up here use repurposed oil drums.  Here, the seawater in the oil drum is carefully heated- not quite to a boil- at which point the Muktuk is gently poached in the final stage of processing.  The next evening, when considering how to cook beluga ribs, Rich decides to try to steam them in an oil drum, joking that his “fine dining” days are clearly over.  It worked great!
