Chef Rich often says that before he can re-imagine indigenous food, he must first re-discover it, and jokes that that often means eating boiled meat. Big John’s method is simple- salt the water, boil the beaver. It’s not fancy but it’s probably the way 99% of the beavers have been cooked up here for the last 14,000 years. From a culinary perspective, it really does let the meat speak for itself. It’s a great place to start the discovery and leaves a lot of room for Rich’s imagination.
