BASS

This dish is Chef Rich’s collaboration with the land- a surf and turf, with the “surf” being the Bass and the “turf” being, well, turf. Cradling a filet of Striped Bass in a thick crawling Juniper bush- roots, dirt and all- and sea plants full of ocean-fresh moisture, Rich imagines that the fish will steam inside this bundle and become infused with the flavours of the land. He’s tried this with moss before, and it’s worked quite well. But Juniper and moss are two totally different things…
