Striped Bass is a strong hardy fish, famous with sports fishermen as trophy fish that fights hard. Much to Chef Rich’s surprise though, its meat is incredibly delicate, and cooks very quickly. While fileting one the previous day, Rich and Clifford tried some raw, and found it to be incredibly fresh and flavourful. In all of Clifford’s years fishing, he’d only had it cooked so Rich has imagined a unique and exciting raw presentation for this filet.
