BELUGA

Northwest Territories

They say home is where the heart is.  And in this case, it’s where the flipper is too.  Traditionally, the first meal eaten after a beluga harvest is a soup made with the whale’s heart and flipper.  Flavored with a bit of soup mix and thickened with flour, it’s a very simple soup that really lets the flavors and textures of the heart and flipper speak for themselves.  Sarah showed Rich how this age-old favorite is made and then, while an Arctic storm raged up outside, with Hank and the family, friends and film crew, everyone ate together.  It was a perfect meal.
